I truly believe that muffins are an idiot-proof bake. Not that I’m implying that any of you, my dear followers, are idiots, it’s just that the whole point is that the mixture mustn’t be too enthusiastically or smoothly combined. By way of evidence, I baked these earlier today while preparing lunch. I was also simultaneously entertaining a 5yr old and I had a baby clinging to my ankles. It’s not that I’m a gifted multi-tasker, they’re just that easy.

You will need:

250g plain flour

6 tbsp golden caster sugar

1 1/2 tbsp baking powder

pinch of salt

6 tbsp crunchy peanut butter (I used Sun-Pat!)

60g unsalted butter, melted

1 large egg, beaten

175ml milk

3x65g Snickers bars, chopped

12-bun muffin tin with paper cases

Red and white polka dot high heeled shoes (optional)

  • Preheat the oven to 200c/gas mark 6.
  • Stir together the flour, sugar, baking powder and salt.
  • Add the peanut butter.
  • Mix until you have a bowl of course crumbs (ooops! I forgot to photograph this stage!).
  • Add the melted butter and egg to the milk.
  • Stir this mixture gently into the bowl.
  • Mix in the Snickers pieces.
  • Dollop into the muffin cases.
  • Cook for 20-25min. the tops should be risen, golden and firm to the (light) touch.
  • Sit the tin on a wire rack for 5-10min before taking out each muffin in its case and leaving them on the wire rack to cool.
  • Dig in!
