Indoor S'mores

Until this past weekend I’d never made, or eaten, s’mores.

I think the traditional campfire treat probably belongs to the imaginary American childhoods we create for ourselves through the film and television of our youth. We ‘know’ s’mores like we know corn dogs, twinkies and candy corn. They provoke nostalgia for a time and place we were never really part of, but is somehow part of us.

Making s’mores was on our Summer List, but the lack of campfire and my aversion to the Great Outdoors, coupled with the absence of Graham Crackers on these shores, necessitated the invention of an indoor, anglicised version of the snack.

You will need:

Chocolate digestives {I used ones coated in milk chocolate as that was all they had at my local Spar, but I think dark would probably make a nicer accompaniment to the sickly sweet mallows}

Izzy and Jesse laid out the biscuits and marshmallows {alternating pink and white of course} and then retreated to the back of the kitchen as I carefully slid the baking tray under the hot grill. It took no more than a minute for the marshmallows to toast nicely. I let them cool slightly before the children placed the second digestive on top ready for the all important squidge!
