I feel a bit of a fraud describing what I offer below as a ‘recipe’. It’s more a marriage of a few simple ingredients that just so happens to result in a satisfying meal. It’s simple, yes, but it would never have occurred to me unless someone had suggested it.

Perhaps that’s it… this is a suggestion.

To lend weight to this suggestion I must tell you this is Izzy’s favourite supper. Her eyes literally light up as she watches me unpack the items that make up this dish. She steals olives as I make it and always helps tear the fresh basil into the bowl.

It’s a suggestion that also represents my version of convenience food. I use store bought meatballs {sometimes veggie ones, sometimes beef} and a jar of passata. If I feel the need to be virtuous I can always make these ingredients from scratch, but really the finished product is so far removed from your typical ready meal that I don’t feel particularly guilty about breaking my self-imposed no processed food rule. 

You will need:
Meatballs {the ones pictured are from Sainsbury’s meat free range}
1 large jar of passata
Pitted black olives
A generous handful of fresh basil
Salt and black pepper
Spaghetti

Place all the ingredients into an over proof dish and season well. Ensure the meatballs are well coated in passatta before placing in a very hot oven to bake for approximately 45 minutes to an hour. The dish is cooked when the sauce is bubbling and the meatballs are piping hot all the way through.

Serve with spaghetti, a heap of freshly grated Parmesan and a tangle of salad leaves.

Oh, and garlic bread, there must always be garlic bread.
