Currently addicted to Leon Power Smoothies, I almost sobbed when we ran out of bananas the other day and I had to go without my fix.

I’ve professed my love for the Leon books many times before and this recipe appears in both Book 1 and Book 2. I honestly can’t recommend these highly enough. Book 2 has the edge for me, a must-read if you’re looking for fast, healthy food and plenty of mealtime inspiration.

The smoothie itself is super easy to whip up in my dinky blender and tastes really yummy. It’s easily filling enough to serve as breakfast in it’s own right, but as I tend to eat very early first thing I’ve been opting for this during my mid-morning study break. It sees me through to lunchtime, and ensures that the biscuit tin doesn’t lead me into temptation, I’ve had my fill of mid-afternoon sugar/caffeine crash and burns.

There is also the added benefit of a certain degree of smugness that comes from consuming something so damn healthy.

Makes 2 medium glasses (or enough for me and the children)

You will need:
1 small banana
a small handful of fresh or frozen berries
60g oats
1 tablespoon clear honey
125ml Greek yogurt
150ml whole milk

  • Peel the banana (and hull the berries if you’ve opted to use fresh ones)
  • Put all the ingredients into a smoothie machine or blender and blitz together.
  • Sip and enjoy. Simples!
