Loveaudrey Bakes: Ruth’s Caramel Cake
No step by step from me tonight. I’ll just direct you to the fabulous blog that is The Pink Whisk. Ruth was the runner-up on BBC2’s ‘The Great British Bake Off’ (essential viewing in the Loveaudrey household) and she posts the most salivation-inducing recipes on her blog. I’ve had this recipe bookmarked for a while, not least because I have a massive weakness for Dime bars (Armadillo!!). It was incredibly easy to bake, I knocked it up while the children ate their breakfast and then Izzy helped me with all the important icing and dime bar crushing tasks.
The cake exceeded all my expectations and I’d venture that this was one of my finest sponges ever… just look how thick they are! Mr. LA’s mother informed me that sponge that’s an inch thick is a sign of a very talented baker *blushes*. The chaps all managed 2 slices but I stuck with one, it’s quite rich but not sickeningly so. A definite contender for our wedding cake buffet, I for one am very glad Ruth shared this fabulous recipe. Now… I’m off to help myself to another slice!
